It would be beneficial to add some inline documentation with JSDoc to the logger interfaces and specific types.
Mainly the ones defined here:

Tags should be added as key/value pairs instead of an array of strings to more closely match the systems they are being send to like Sentry.

Console logging output should be: [key1:value1|key2:value2]

It is possible to define objects which can be written to the log by specifying the objects field of the LogOptions passed to the logging statement. The objects passed get implicitly casted into a string which will result in nested objects not being shown completely.
Passed object should be automatically explicitly turned into a string using JSON.stringify.

Further more, is it intended, that the meta object of type LogMetaInformation is not appended to the logged message for the console logger at all? It is only used inside the callbackData.

• Create simple default config (based on Logging react test app config)
• Search through all console.log|warn|trace|error|info statements in .ts files (which are considered source) and replace with default logger call

Add an individually published logging-react package that houses a React context which provides the logger.

The deepmerge-ts package causes problems in React Native and should be replaced with a simple custom merging algorithm.
