I found two related issues in my setup:

1. the class name seems to be .language-mermaid not .mermaid
2. getElementsByClassName returns a HTMLCollection which doesn't support .forEach out of the box

The fix which works for me:

    var graphs = Array.from(document.getElementsByClassName("language-mermaid"));

Example:

The reason is that innerText is being used, which only returns visible content:

If the content is not (yet) visible, you get an empty string, and the graph does not render. Instead you get a parsing error in the web console.

Changing innerText to textContent seems to resolve the problem.
