I was wondering if the PHY layer is really adapted to 802.11ah.

It is stated here on page 32 (pdf page 42) that:

• the OFDM carriers are changed.
• the modulation types & coding rates are changed.

You haven't committed the cc files of Bastian where you made these changes.

Also, looking at Matlab PHY there seem to be quite structural differences between non-HT 802.11 versions and 802.11ah. It seems 802.11a/g/p aren't as compatible as we expected.
For example:

I get an error for 802.11_ah_txrx and 802.11_ah_tx that the blocks correctiq and wifi_ph_hier blocks are not found when opening the GRC projects.

I have a working version of grc 3.8 and Bastian's WiFi code on an Ubuntu 20 VM. The following error shows when trying to open any of the grc files in this project:

Error: mapping values are not allowed here
in "~/gr-802.11ah/802_11_ah_rx.grc", line 112, column 65

Failure

I ven moved the file to the same location Bastian's examples run from, and it results in the same error.

I think you might need to add this intermediate step:
pybombs recipes add-defaults

And I think the reason why everything takes so long because the recipe contains a lot of redundant software. But I'll have to see
