html2canvas and therefore all things which depend on it, have the unacceptable side effect of rasterizintg the text, effectively converting it into strokes on a canvas and not text anymore. As a result, in the resulting PDF one may not select any text, e.g. copy-paste purposes.

The resulting canvas it exported as a JPEG or PNG, and this is definitely not text anymore.

It sounds like a small thing, but it's not! The content once drawn is wholly worthless as far as copying-and-pasting behavior, supporting chapters or table of contents or other metadata. It's not really a PDF, but rather a picture inside a PDF container.
