Another way you coul've approach it is using your seedItemToDatabase method that you required from test-utils in a second describe inside the one you created, like so:

describe('GET', () => {
    it('renders a single item ', async () => {
      const item = await seedItemToDatabase();

then your response will be more simple with only a get in your request:

      const response = await request(app)
        .get(`/items/${item._id}`);
      
      assert.include(parseTextFromHTML(response.text, '#item-title'), item.title);

I know routing is one of the simple parts of server side development, mainly because it is always set up alike, and it keeps a construction pattern, yet in order to succeed it is necessary to understand it, and even then it could sometimes be tricky to set up. That said, you have really good understanding as well as consideration for the user by adding a delete route:
