This has actually got nothing to do with the tabs - but the way you have configured your form submission. You can still load a content via ajax provided you have a method to submit your form without overwriting the tabs markup. If you overwrite tabs markup you would need to reinitialize the tabs-x plugin.

I just can't figure out where the "enableCache" option goes.

This currently needs to be setup via javascript or as data attributes in your link options for each item in your tab items array
