Chemistry of Carbohydrates - An Analysis of Commercial Data

ABSTRACT

The present work aims to present at first hand an introduction to carbohydrate chemistry approaching all its molecular part. In this foreground, topics such as monosaccharides and polysaccharides, carbohydrates as informative molecules and the main molecules present will be introduced. After such topics, the presence of such molecules in the economic sphere and how they influence the national market will be explained. For this work will be used the reference of the book Principles of Biochemistry, Lehninger, 6Ed. For the economic data will be taken from the COMEXSAT and IBGE portals.

Keywords: Carbohydrates. Monosaccharides. Biochemistry.

Carbohydrates are polyhydroxyaldehydes or polyhydroxyketones, in short, substances that produce compounds when hydrolyzed. They are the most abundant biomolecules on Earth, present in sugars and starches, they are a key point in many diets in the world. There are three main classes of carbohydrates, among them, monosaccharides, disaccharides and polysaccharides, where the radical “saccharides” derives from the Greek meaning “sugar”. They are fundamental not only in biochemistry but in several industrial and economic branches, it is the factor of several agricultural products and has been fundamental for commerce from the production of fabrics to the production of fuels.
