I've recently reverse-engineered the api.woolworthsrewards.com.au v2 authentication process. I don't use Up Bank myself, but happy to provide details if you're still interested - I'm pl4nty#5958 on Discord.

When I login via a browser https://www.woolworthsrewards.com.au it asks me the verification code sent via SMS or Email. I assume this could be a problem? One ugly solution is to listen to incoming email and get the code from there, but then I'd probably use a separate email box for that.

I was just digging into a similar problem over the holiday break, trying to import Woolies transactions into my expenses spreadsheet.
Rather than reimplementing the whole API dance myself I'd be keen to fork this repo and use it as my starting point but I can't see what license you've used here.
