First email client I ever used outside of AOL
The very first email app on iPhone (to my knowledge) is IbisMail. Their website states that version 1.0 was released on 03/08/2009 => http://ibis.ne.jp/en/products/ibisMail_iPhone/
Before Outlook, Microsoft had Schedule+ and Exchange Client released in 1996 along with Microsoft Exchange 4.0 (e.g.first public version). It's pretty clear that Outlook started by combining the code of these two applications.
Claris Emailer (https://en.wikipedia.org/wiki/Claris_Emailer) was first released in July, 1995 (https://tidbits.com/article/1389) for classic Mac OS. The last version was released in 1998.
Claris Emailer Lite was included in the Apple Internet Connection Kit (Mac OS 7.5) and was later bundled with Mac OS 8.

Apple Mail is actually an acquisition from NeXT. It should start as NeXTMail in 1989 and show an acquisition in 1997 when NeXT was acquired by Apple. There is a hiatus where Mail was not available as a public, non-preview release again until 1999 with Mac OS X Server 1.0.
It's still in active develoment so I think this might be a slight glitch in the matrix.

The first version of Outlook Express for Mac was part of Microsoft Office 98 Macintosh Edition in 1998 (https://en.wikipedia.org/wiki/Microsoft_Office_98_Macintosh_Edition).
The last version was Outlook Express 5.5 (https://en.wikipedia.org/wiki/Outlook_Express#Versions_for_Mac), bundled with IE 5.2.3 in 2003 (https://en.wikipedia.org/wiki/Internet_Explorer_for_Mac)
I started using GyazMail in 2005, and was very happy with it for many years. It was last updated in Sept 2015, so not sure whether it is still in development, but it has a respectable history and deserves to be included.
