Just tested your pack in KSP 1.11. Tested 2 of 4 missions. Mun Ore miner mission and Ore capture mission are to be done.
Tourists don't spawn inside vessel so I can't complete tourist orbiter mission. Also RIP Geobb =(
Tourist craft can be made bigger and heavier to encourage using engineer to attach chutes. It's to easy to save it with heat-shielded claw probe.

Airplane mission can be done another way - transmission is not the only way to finish it. You can take data and return it to Kerbin in science container, advanced probe cores or crewed capsule. And mission is not failed when I do it this way and destroy plane. Plane just becomes marked (TBD) and mission waits for data transmission.
I suggest to

1. check if plane is destroyed and science is transmitted beforehead
   or
2. make it possible to deliver experiment results directly
   I don't know if its intended, but I can save plane pilot without engineer help. To do it I just catch plane with Claw and do crew transfer.
