Move README screenshot images to a screenshots/ directory

Move the screenshot images to a screenshots/ directory.
I like screenshots better than images because we often talk about container images. Let's not confuse learners with terminology that means very different things.

Edit the README.md file and change the links to the screenshots/ directory.

Add MAINTAINERS.md file

Makefile build target does not work

It throws an error message about needing one parameter. I suspect the docker build needs to specify the current directory. Not sure if/why this was working as-is, but it does not build on my Mac without that extra parameter.
