Changing log levels in production

Hi!

Thanks for this guide/example. I really like this approach to logging.
I was fiddeling around a bit and got stuck on the best way to keep the log-level functionality in a production environment.
When building the Next.js app for production webpack will inline the log level "settings".
It would be good to be able to adjust log levels for a production app (even if it perhaps means a restart of the application).

Have you tested this or have any thoughts of the some way to do it?
