move from using string errors to `std::error::Error`

String errors are fine for now, but conforming error types to std::error::Error comes with a few benefits:

  • Standardization
  • Ability to add additional context to error messages
  • Compatibility with Result and easier propagation with the ? operator
  • Plus a couple others like downcasting & integration into other libraries

I've been using the thiserror crate [crate.io link] to make the experience a little bit better. This was mainly driven by the fact hat we also have to use std::error::Error with uniffi in order to handle errors across the the language boundary properly.

Again, Strings are totally fine for now though! This is something that can come later for sure.
