Long time coming but I ran into this same issue. Here is my fix procedure.
(1) cd fpga-zynq/zedboard
(2) make ramdisk-open
(3) mount -t ext2 ramdisk/home/root/buildroot.rootfs.ext2 /somefolder to mount the RISC-V filesystem image
(4) Edit /somefolder/etc/shadow with your editor of choice. Change the password hash for root to $1$2CMKSo57$U.FHm8zmyfTa8X/LTHx8o0. This is just root:root.
(5) umount /somefolder
(6) make ramdisk-close
(7) make load SD=$yourSDcard
(8) Insert SD card into ZedBoard and load per usual. Password for the RISC-V Linux core should now be root:root
from fpga-zynq.
