###Tortilla soup

  • Some canola and/or olive oil
  • 1 pound chicken breast tenders, cut into bite-sized pieces
  • 1 large (28oz) can stewed tomatoes, undrained.
  • 1 box of Trader Joe's chicken broth - 24-28oz-ish
  • 2 teaspoons fresh minced or crushed garlic
  • 1 tsp Tony Chachere's "More Spice" seasoning
  • 1 teaspoon ground cumin
  • 1/4 cup chopped fresh cilantro
  • A smallish chunk of adobo chili pepper (get them in a can with the sauce)
  • A handful of shredded cheddar cheese.
  • 1 bag of tortilla strips
  • 1 lime, cut into wedges

####Instructions

Dump about 1 tsp or so of canola oil in a pan and sauté the garlic and chicken for a couple of minutes until the chicken is all white but not browning. I add a little olive oil too just because I like olive oil.

Dump all of that in to a stew pot. Add almost all of the broth box, the cumin and Tony Chachere's, stir that around, and add about 3/4 of the tomatoes and accompanying juice. I like to cut the tomatoes into smaller pieces, halves or quarters.

Finely chop a quarter-sized piece of the adobo chili and add it to the broth. Chop it fine so it dissolves into the broth. A little goes a long way and you can always add more.

Bring this to a boil and reduce heat to simmer, cover for for 30-45 minutes or until the chicken and tomatoes start to break up.

Throw in a handful of cheese and the chopped cilantro. Now it's time to asses your mix. Is it thick enough? Could it use a little more broth? how about more tomatoes? Is it smoky tasting and spicy enough? Add a tiny bit more of the adobo if it's not. More cheese if it's too thin. Careful with the cheese.

Serve with the tortilla strips and squeeze the lime over it. Enjoy!

###Roasted Garlic Spread

This, along with brie and a nice bottle of red, is my de facto go-to party dish. It fairly cheap and easy, and it’s always a hit. Prep time: 10 minutes. Cook time: An hour to an hour and 15 minutes.

Garlic bulbs (one or two per person) Olive Oil Ground pepper Sea Salt Aluminum Foil A baking tray or pie dish

Pre-heat your oven to 375. Take each clove and remove any really flaky skin. Cut off the top of the bulb so that most of the tops of the cloves are exposed. I find that a bread knife works really well for this.

Take a square of aluminum foil, place a bulb in the center, and wrap the foil up around the sides, but don’t fully close it. You will need to get oil, salt, and pepper in there still. So, do that next. Drizzle olive oil on the top of the bulb - use your best guess as to how much but I usually use about a teaspoon. The oil will flavor the garlic, but it also helps it to cook. So if you don’t put enough on, you may be disappointed.

Grind a little salt and pepper on the tops, and then finish sealing the foil by crunching it all together over the top. It’s important to seal it up so the garlic stays moist. Also, I’ve tried putting multiple bulbs in one piece of foil and the garlic didn’t cook.

Put them in the center of the oven and bake for an hour. Pull out a bulb with an oven mitt and give it a light squeeze. It should be mushy. If it’s not, put it back in for 10 or 15 minutes.

When it’s finished cooking, pull it out of the oven to cool for a while. Into a bowl, squeeze the bulb so that all of the baked garlic oozes out. It should have the consistency of peanut butter. Squeeze out as much garlic as you can and then whip it with a fork. Done! Delicious with brie on crackers or by itself on toasted and buttered baguette slices.

###Gluten Free Egg Free Pancakes

  • 1 cup of gluten free all-purpose flour
  • 1 tablespoon ground flax seed (flax meal)
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • ¼ teaspoon salt
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla
  • ¼ cup of unsweetened applesauce
  • 1 cup of almond milk

####Instructions

In a medium size mixing bowl, sift together flour, flax meal, baking powder, cinnamon, and salt.

In a separate bowl, combine maple syrup, vanilla, applesauce, and milk. Slowly mix in half of the liquid into dry bowl, stirring continuously, and the rest ¼ cup at a time to avoid a runny batter. Mix until you get the lumps out of the batter. You don't want it to be too thick or too runny. There's a happy medium and 1 cup + 2-ish tablespoons should be just about right.

On a greased, heated griddle over medium heat (or pan on your stovetop), begin to cook pancakes about a ¼ cup of the batter for each one.

Cook 1-2 minutes until they start to bubble around the edges, and flip. Cook for another 1-2 minutes. Remove from pan and serve.

###Scrambled Eggs

  • 3 eggs
  • Pinch of Salt

####Instructions

Mix eggs in a medium-sized mixing bowl. Pour eggs into a skillet and put on medium-low heat. Fold eggs as they are cooking. Add a pinch of salt. Once consistency is to desired texture, move eggs to plate. Consume.

###Worlds Best Lasagna

  • 1 pound sweet Italian sausage

  • 3/4 pound lean ground beef 
- 1/2 cup minced onion

  • 2 cloves garlic, crushed

  • 1 (28 ounce) can crushed tomatoes 
- 2 (6 ounce) cans tomato paste

  • 2 (6.5 ounce) cans canned tomato sauce

  • 1/2 cup water

  • 2 tablespoons white sugar

  • 1 1/2 teaspoons dried basil leaves

  • 1/2 teaspoon fennel seeds

  • 1 teaspoon Italian seasoning

  • 1 tablespoon salt

  • 1/4 teaspoon ground black pepper 
- 4 tablespoons chopped fresh parsley

  • 12 lasagna noodles

  • 16 ounces ricotta cheese 
- 1 egg 
- 1/2 teaspoon salt 
- 3/4 pound mozzarella cheese, sliced

  • 3/4 cup grated Parmesan cheese


####Instructions

In a Dutch oven, cook sausage, ground beef, onion, and garlic over medium heat until well browned. Stir in crushed tomatoes, tomato paste, tomato sauce, and water. Season with sugar, basil, fennel seeds, Italian seasoning, 1 tablespoon salt, pepper, and 2 tablespoons parsley. Simmer, covered, for about 1 1/2 hours, stirring occasionally.

Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in boiling water for 8 to 10 minutes. Drain noodles, and rinse with cold water. In a mixing bowl, combine ricotta cheese with egg, remaining parsley, and 1/2 teaspoon salt.

Preheat oven to 375 degrees F (190 degrees C).

To assemble, spread 1 1/2 cups of meat sauce in the bottom of a 9x13 inch baking dish. Arrange 6 noodles lengthwise over meat sauce. Spread with one half of the ricotta cheese mixture. Top with a third of mozzarella cheese slices. Spoon 1 1/2 cups meat sauce over mozzarella, and sprinkle with 1/4 cup Parmesan cheese. Repeat layers, and top with remaining mozzarella and Parmesan cheese. Cover with foil: to prevent sticking, either spray foil with cooking spray, or make sure the foil does not touch the cheese.

Bake in preheated oven for 25 minutes. Remove foil, and bake an additional 25 minutes. Cool for 15 minutes before serving.

  4. Put bagels into toaster and select your desired crunchiness
  5. Pull down lever to start bageling'
  6. When bagels are ready, spread cream cheese all over it.
  7. Eat and repeat.

Fresh Peach Trifle

Ingredients
  • 6 large ripe peaches - peeled, pitted and sliced
  • 1 tablespoon fresh lemon juice
  • 2 (8 ounce) containers vanilla yogurt
  • 1 teaspoon lemon zest
  • 1 (10 inch) prepared angel food cake
Preparation
  1. Place peaches in a large bowl, and gently toss with lemon juice. Place 1 cup of peaches in a blender, set aside remaining slices, and blend until smooth. Place yogurt into a bowl; stir in the peach puree and lemon zest until well blended.

  2. Cut the angel food cake into squares and place half in the bottom of a glass dish. Spoon half of the peach slices over the cake. Cover with half of the yogurt mixture. Place remaining cake squares over the yogurt. Top with peaches, reserving 5 or 6 slices for garnish. Cover with remaining yogurt mixture. Garnish with peach slices. Refrigerate until ready to serve.

( Green Tea Over Rice )
Ingredients
  • 2 cups cooked Brown Rice (for a Bland - Diet see Ann’s Tips)
  • ¼ cup chopped blanched spinach
  • 1 teaspoon toasted sesame seeds (optional)
  • 2 teaspoons chopped scallions (optional)
  • 2 teaspoons miso paste (not-optional!)
  • 2 cups brewed green tea
  • Nori
  • 1 chicken breast medium
  • Gluten free soy sauce
Instructions

Cook the rice to personal preference. A good bet (if using a pan) is to use 2x the measurement of the rice, for the amount of water. This applies to regular brown rice however. If you happen to have brown sushi rice or sticky rice, then add just a little more water than the measured amount of rice.

E.g.

- 1 cup of brown rice = 2 cups of water.

- 1 cup of brown sushi rice or sticky rice = 1 and a bit cups (or there abouts..) of water.

If you have some spare, its nice to spread some Miso paste on the raw chicken before cooking it.

Once the chicken is cooked and the Green Tea brewed. Add a Teaspoon Miso Paste to a bowl and pour over the hot Green tea - stir thoroughly.

Now add all the ingredients into the bowl and cover. Wait 2 - 3 mins or until just cool enough to eat then enjoy!

  • Add soy sauce to taste.

Mash-topped beef & Guinness pie

Ingredients

2 onions 2 cloves of garlic 2 carrots 3 stalks of celery 2 fresh bay leaves ½ a bunch of fresh thyme olive oil 500 g stewing beef (2.5cm dice) 3 tablespoons flour 600 ml Guinness 2 teaspoons brown sugar 450 g potatoes 75 ml milk 1 tablespoon butter

####Method Peel and roughly chop the onions, garlic and carrots, then trim and roughly chop the celery. Tie the bay and thyme sprigs together with string. Heat 2 tablespoons of oil in a large casserole pan over a medium heat. and add the vegetables and herbs. Toss everything in the oil to coat, then season. Cook, covered, for 10 minutes, or until the veg is softening, stirring occasionally. Transfer to a plate. Toss the beef in the flour and season, then add to the pan and cook until browned all over (you may need to do this in batches). Deglaze the pan with the Guinness. Add the veg and herbs, then top up with water if needed, to just cover the meat and veg. Stir in the brown sugar. Bring to the boil, then cover and simmer for about 2 hours, or until the meat is tender. Cook the potatoes in a large pan of boiling salted water, then drain. Mash with the milk, butter and a pinch of sea salt and black pepper. Preheat the oven to 200ºC/400ºF/gas 6. Put the meat in an ovenproof dish, top with the mash and drizzle with oil. Bake for 20 minutes, or until golden and crisping up.

###INGREDIENTS

3/4pound ( 2 3/4 cups) all-purpose flour, plus a little extra for rolling the tortillas 5tablespoonslard or vegetable shortening, or a mixture of the two 3/4teaspoon salt About 3/4cup very warm tap water

###INSTRUCTIONS

Make the dough. Combine the flour and fat in a large mixing bowl, working in the fat with your fingers, until completely incorporated. Dissolve the salt in the water, pour about 2/3 cup of it over the dry ingredients and immediately work it in with a fork; the dough will be in large clumps rather than a homogeneous mass. If all the dry ingredients haven't been dampened, add the rest of the liquid (plus a little more, if necessary). Scoop the dough onto your work surface and knead until smooth. It should be medium-stiff consistency -- definitely not firm, but not quite as soft as most bread dough either. Rest the dough. Divide the dough into 12 portions and roll each into a ball. Set them on a plate, cover with plastic wrap and let rest at least 30 minutes (to make the dough less springy, easier to roll). Roll and griddle-bake the tortillas. Heat an ungreased griddle or heavy skillet over medium to medium-high heat.On a lightly floured surface, roll out a portion of the dough into an even 7-inch circle: Flatten a ball of dough, flour it, then roll forward and back across it; rotate a sixth of a turn and roll forward and back again; continue rotating and rolling until you reach a 7-inch circle, lightly flouring the tortilla and work surface from time to time.Lay the tortilla on the hot griddle (you should hear a faint sizzle and see an almost immediate bubbling across the surface). After 30 to 45 seconds, when there are browned splotches underneath, flip it over. Bake 30 to 45 seconds more, until the other side is browned; don't overbake the tortilla or it will become crisp. Remove and wrap in a cloth napkin placed in a tortilla warmer. Roll and griddle-bake the remaining tortillas in the same manner and stacking them one on top of the other.
