Thanks for publishing this write up; I have found it a helpful resource for exploring security of WebRTC.
I think the following statement qrequires more qualification:

WebRTC is currently regarded by some to be one of the most secure VoIP solutions out there

Footnote 19 references an author's website that indicates he does consulting related to WebRTC. I think other references should be provided to bolster the claim.

6. Secure Coding Practices (Good (secure) coding conventions for WebRTC applications.)

There are no codes in this section, but lots of design principle are described.

Some might not notice that this document is hosted by GitHub pages. Just adding a sentence like 'This document is hosted at GitHub and we're waiting for your Pull request' will promote the document fruitful I think.
