This was changed before my time, but the rationale is simple: the restrictions are ridiculous.

Fair enough. But the lifting of some restrictions in GemRB then creates an general inconsistency for what is allowed and what's not allowed, e.g. now that we allow a Half-Elf to become a Paladin why not also allow an Elf to become a Paladin? And we acknowledge that also Dwarfs can have a nice singing voice and are able to play guitars, so we allow them to be Bards, but they could also use Bows, so why can't they also be Rangers? And what about mage specializations? Why can't a Half-Elf not become a Necromancer then?
Shouldn't we then go the full way and just dump all restrictions for everyone?
Or adhere to the originals and allow to lift restrictions with an option somewhere? And users can always edit classes.2da
by themselfs if they want to "mod" their experience.

Sure, the most proper way is to follow the originals and move changes to a mod like gemrb-tweaks.
